  3. Meanwhile, heat a dry skillet over medium heat. Add the pine nuts and toast them until golden brown, stirring frequently. Remove from heat and set aside.
  4. In a large skillet, heat the olive oil over medium heat. Add the red bell pepper, red onion, and garlic. Sauté until the vegetables are tender, about 5 minutes.
  5. Fluff the couscous with a fork and transfer it to the skillet with the vegetables. Add the ground cumin, ground coriander, and salt. Stir well to combine.
  6. Cook for an additional 2-3 minutes, until everything is heated through.
