The Sachertorte was created in 1832 by Franz Sacher, a 16-year-old apprentice chef, for Prince Wenzel von Metternich in Vienna, Austria.

Preheat the oven to 180°C (350°F) and grease a round cake pan.

Melt the dark chocolate and butter together in a heatproof bowl over simmering water.

In a separate bowl, beat the eggs and sugar until pale and fluffy.

Add the melted chocolate mixture and vanilla extract to the egg mixture and stir until well combined.

Gradually fold in the flour until just combined.

Pour the batter into the prepared cake pan and smooth the top.

Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.

Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Once the cake has cooled, spread a layer of apricot jam on top.

For the glaze, melt the dark chocolate and heavy cream together in a heatproof bowl over simmering water.

Pour the glaze over the cake, allowing it to drip down the sides.

Let the glaze set for at least 2 hours before serving.
