In a large bowl, combine flour, sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Gradually add water, tossing with a fork until dough forms a ball.

On a lightly floured surface, roll out dough into a 12-inch circle. Transfer to a parchment-lined baking sheet.

In a separate bowl, combine sliced pears, cranberries, lemon juice, cornstarch, cinnamon, and vanilla extract. Toss until well coated.

Arrange the pear-cranberry mixture in the center of the dough, leaving a 2-inch border. Fold the edges of the dough over the filling, pleating as necessary.

In a small bowl, beat together the egg and milk. Brush the edges of the dough with the egg wash.
