In a food processor, pulse the vanilla wafer cookies and walnuts until finely ground.

Transfer the mixture to a bowl and add powdered sugar, cocoa powder, rum, and honey. Mix well until combined.

Cover the bowl and refrigerate for 30 minutes to 1 hour.

Shape the mixture into small balls, about 1 inch in diameter.

Roll the balls in sprinkles or shredded coconut to coat.

Place the rum cookie balls on a baking sheet lined with parchment paper.

Refrigerate for another 30 minutes to set.
