In a large bowl, mix together the flour and 1 tablespoon of sugar. Cut in the butter and cream cheese until the mixture resembles coarse crumbs. Add vanilla extract and salt, and mix until the dough comes together. Divide the dough into 4 equal portions, wrap in plastic wrap, and refrigerate for 30 minutes.

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

On a lightly floured surface, roll out one portion of dough into a circle. Spread 2 tablespoons of jam over the dough, leaving a small border. Sprinkle with chopped nuts and cinnamon. Cut the dough into 8 wedges. Roll up each wedge from the wider end to the tip. Place the rugelach on the prepared baking sheet. Repeat with the remaining dough and filling.

Bake for 15-20 minutes, or until golden brown. Allow the rugelach to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
