  1. Preheat the oven to 350°F (175°C) and grease three 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a separate large bowl, cream together the softened butter and sugar until light and fluffy.
  4. Beat in the eggs, one at a time, followed by the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, starting and ending with the dry mixture.
  6. Divide the batter evenly into six bowls. Add a few drops of food coloring to each bowl and mix until the desired colors are achieved.
  7. Spoon the colored batters into the prepared cake pans, creating layers of different colors.
  8. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  10. Once cooled, stack the cake layers on top of each other, spreading a thin layer of whipped cream between each layer.
  11. Frost the outside of the cake with the remaining whipped cream and decorate with rainbow sprinkles.
  12. Chill the cake in the refrigerator for at least 1 hour before serving.
