Asiago cheese is named after the Asiago plateau in Italy, where it originated.

Preheat the oven to 375°F (190°C).

Roll out the puff pastry and cut it into circles to fit your tart pans.

Place the puff pastry circles into the tart pans and press them gently to fit.

In a skillet, sauté the mushrooms until they release their moisture and become golden brown.

In a bowl, whisk together the eggs, heavy cream, salt, black pepper, and fresh thyme.

Divide the sautéed mushrooms and Asiago cheese among the tart pans.

Pour the egg mixture over the mushrooms and cheese.

Bake in the preheated oven for 20-25 minutes, or until the tarts are golden brown and set.
