Root Vegetable Gratin
Gratin originated in French cuisine and is a popular comfort food dish made with layers of ingredients and a crispy, cheesy topping.

Preheat the oven to 375°F (190°C).

Peel and thinly slice the potatoes, carrots, parsnips, onion, and garlic.

In a saucepan, melt the butter over medium heat. Add the onion and garlic, and cook until softened.

In a greased baking dish, layer the sliced vegetables, starting with the potatoes. Sprinkle each layer with salt, pepper, and thyme.

Pour the heavy cream over the vegetables.

Cover the dish with foil and bake for 30 minutes.

Remove the foil, sprinkle the grated Gruyere cheese on top, and bake for an additional 20 minutes, or until the cheese is melted and golden.

Let the gratin rest for 10 minutes before serving.
