Roll-Out Cookies
Roll-out cookies are often made during the holiday season and are a popular treat for cookie exchanges.
This is vegetarian recipe. Dish can be prepared in 60 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 7.

In a medium bowl, whisk together flour, baking powder, and salt. Set aside.

In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla extract.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for at least 30 minutes.

Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.

On a lightly floured surface, roll out the dough to about 1/4 inch thickness. Use cookie cutters to cut out desired shapes.

Place the cut-out cookies onto the prepared baking sheets and bake for 8-10 minutes, or until the edges are lightly golden.

Allow the cookies to cool on the baking sheets for a few minutes, then transfer to a wire rack to cool completely.

Decorate the cookies with icing or sprinkles, if desired.
