Roasted Vegetable Galettes
Galettes originated in France and are typically made with a buckwheat flour crust. However, this recipe uses puff pastry for a lighter and flakier texture.

Preheat the oven to 200°C (400°F).

Roll out the puff pastry sheets and cut them into desired shapes.

Place the pastry shapes on a baking sheet lined with parchment paper.

In a bowl, toss the assorted vegetables with olive oil, salt, and black pepper.

Arrange the seasoned vegetables on top of the pastry shapes.

Bake in the preheated oven for 25-30 minutes, or until the pastry is golden and the vegetables are roasted.

Remove from the oven and let it rest for 10 minutes.

Garnish with fresh basil leaves and grated Parmesan cheese.
