Peel and dice the sweet potatoes into small cubes.

In a large bowl, combine the sweet potatoes, olive oil, maple syrup, cinnamon, nutmeg, and salt. Toss until the sweet potatoes are well coated.

Spread the sweet potatoes in a single layer on a baking sheet and roast in the preheated oven for 25-30 minutes, or until they are tender and slightly caramelized.

In the meantime, heat the butter in a large skillet over medium heat. Add the red onion, bell pepper, and minced garlic. Sauté until the vegetables are soft and fragrant.

Push the sautéed vegetables to one side of the skillet and crack the eggs onto the other side. Season the eggs with salt and pepper.

Cover the skillet with a lid and cook for 4-5 minutes, or until the eggs are cooked to your desired doneness.
