  1. Preheat the oven to 400°F (200°C).
  2. Rinse the quinoa under cold water.
  3. In a saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa and a pinch of salt. Reduce heat, cover, and simmer for 15 minutes or until the water is absorbed.
  4. While the quinoa is cooking, cut the red bell pepper into small pieces and slice the mushrooms.
  5. In a bowl, toss the red bell pepper, mushrooms, garlic cloves, olive oil, salt, and black pepper.
  6. Spread the mixture onto a baking sheet and roast in the preheated oven for 15-20 minutes, or until the vegetables are tender and slightly charred.
  7. Once the quinoa is cooked, fluff it with a fork and transfer it to a large serving bowl.
  8. Add the roasted vegetables to the quinoa and toss to combine.
  9. Drizzle with lemon juice and sprinkle with fresh parsley.
  10. Let it rest for 5 minutes before serving.
