Roasted Cashew Vegetables
Cashews are not actually nuts, but seeds that grow on the cashew apple, which is a fruit native to Brazil.
This is vegetarian, gluten free and high protein recipe. Dish can be prepared in 45 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 9.

Preheat the oven to 200°C (400°F).

In a large bowl, combine cashews, broccoli, carrots, and red bell pepper.

Drizzle olive oil and soy sauce over the vegetables and cashews. Sprinkle with garlic powder, salt, and black pepper. Toss well to coat.

Transfer the mixture to a baking sheet and spread it out in a single layer.

Roast in the preheated oven for 25 minutes, or until the vegetables are tender and the cashews are golden brown.

Remove from the oven and let it rest for 5 minutes.
