  1. Preheat the oven to 400°F (200°C). Roll out the puff pastry sheet and cut it into rectangular strips.
  2. Place the pastry strips on a baking sheet lined with parchment paper and bake for 20-25 minutes until golden brown.
  3. In a mixing bowl, combine ricotta cheese, powdered sugar, and vanilla extract. Mix well.
  4. In a separate bowl, whip the heavy cream until stiff peaks form. Fold the whipped cream into the ricotta mixture.
  5. Once the pastry strips have cooled, slice them in half lengthwise. Fill each strip with the ricotta cream mixture.
  6. In a small saucepan, melt the dark chocolate and butter over low heat. Stir in the milk until smooth.
  7. Dip each filled eclair into the chocolate ganache, coating it evenly. Place on a wire rack to allow the ganache to set.
