  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and place it in a 9-inch pie dish.
  3. In a large bowl, combine the rhubarb, raspberries, sugar, cornstarch, and lemon juice. Mix well.
  4. Pour the filling into the pie crust.
  5. Dot the top of the filling with small pieces of butter.
  6. Roll out the remaining pie crust and cut it into strips.
  7. Create a lattice pattern on top of the filling with the pie crust strips.
  8. Beat the egg in a small bowl and brush it over the lattice crust.
  9. Bake the pie for 45 minutes, or until the crust is golden brown.
  10. Remove from the oven and let it rest for 30 minutes before serving.
