  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan to form the crust.
  3. In a large mixing bowl, beat cream cheese and granulated sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla extract and flour.
  4. Pour the cream cheese mixture over the crust in the springform pan.
  5. In a separate bowl, combine chopped rhubarb and sliced strawberries. Spread the fruit mixture evenly over the cream cheese layer.
  6. Bake for 55-60 minutes, or until the center is set.
  7. Remove from the oven and allow the cheesecake to cool in the pan for 10 minutes.
  8. Run a knife around the edge of the pan to loosen the cheesecake, then remove the sides of the pan.
  9. Allow the cheesecake to cool completely, then refrigerate for at least 2 hours or overnight.
  10. Before serving, dust the top of the cheesecake with powdered sugar. Enjoy!
