Add the potatoes and vegetable broth to the pot. Bring to a boil and then reduce heat to simmer for about 20 minutes, or until the potatoes are tender.

While the potatoes are cooking, remove the tough stems from the kale leaves and chop them into thin strips.

Add the chopped kale to the pot and simmer for an additional 5 minutes.
