Reduced Sugar Blueberry Muffins
Blueberries are often referred to as a superfood due to their high antioxidant content.

Preheat the oven to 375°F (190°C). Grease a muffin tin or line with paper liners.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a separate large bowl, cream together the butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Gently fold in the blueberries.

Divide the batter evenly among the muffin cups. Sprinkle turbinado sugar on top, if desired.

Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
