  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. In a small bowl, mix the red food coloring and cocoa powder to form a paste. Add the paste to the butter mixture and mix until well combined.
  5. Gradually add the flour, alternating with the buttermilk, beginning and ending with the flour. Mix in the vanilla extract.
  6. In a separate small bowl, combine the vinegar and baking soda. Add this mixture to the batter and mix until just combined.
  7. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and let cool in the pan for 5 minutes. Then transfer the cupcakes to a wire rack to cool completely.
  10. In a mixing bowl, beat the cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, beating until well combined.
