Easy Fluffy Fruit Roll Cake

Preheat the oven to 350°F (175°C). Grease and line a 10x15 inch jelly roll pan with parchment paper.

In a small bowl, whisk together the all-purpose flour, baking powder, and salt.

In a large mixing bowl, beat the eggs and granulated sugar until thick and pale yellow in color.

Stir in the vanilla extract and milk.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

In a small saucepan, melt the unsalted butter over low heat. Gradually add the melted butter to the batter, mixing well.

Pour the batter into the prepared jelly roll pan and spread it evenly.

Bake for 12-15 minutes, or until the cake springs back when lightly touched.

Remove the cake from the oven and let it cool in the pan for 5 minutes.

Dust a clean kitchen towel with powdered sugar. Carefully invert the cake onto the towel.

Gently peel off the parchment paper.

Starting from one of the short ends, roll the cake up tightly in the towel.

Let the cake cool completely in the rolled position.

Unroll the cake and spread it with your favorite fresh fruit.

Roll the cake back up, removing the towel as you go.

Dust the top of the cake with powdered sugar.

Slice and serve.
