  2. In a large mixing bowl, combine the red velvet cake mix, eggs, vegetable oil, and water. Mix until well combined.
  3. Pour the batter into a greased 9-inch (23 cm) springform pan.
  4. In a separate bowl, beat the cream cheese and sugar until smooth.
  5. Add the eggs, one at a time, and mix well after each addition.
  6. Stir in the vanilla extract and red food coloring.
  7. Pour the cream cheese mixture over the red velvet batter in the springform pan.
  8. Bake for 60 minutes or until the center is set.
  9. Remove from the oven and let it cool in the pan for 10 minutes.
  10. Run a knife around the edges of the pan to loosen the cheesecake.
  11. Remove the sides of the springform pan and let the cheesecake cool completely.
  12. In a small bowl, mix together the sour cream, flour, cocoa powder, and salt.
  13. Spread the sour cream mixture evenly over the top of the cooled cheesecake.
  14. Refrigerate for at least 2 hours or overnight.
  15. Serve chilled with whipped cream and sprinkles on top.
