Preheat the oven to 180°C (350°F). Roll out the puff pastry sheet and place it in a tart pan.

Slice the eggplant, zucchini, red bell pepper, yellow bell pepper, and onion into thin rounds.

In a large skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant.

Add tomato paste, dried basil, dried oregano, salt, and black pepper to the skillet. Stir well.

Add the sliced vegetables to the skillet and cook for 5 minutes, until slightly softened.

Transfer the cooked vegetables onto the puff pastry in the tart pan, arranging them in an overlapping pattern.

Bake the tart in the preheated oven for 30-35 minutes, until the pastry is golden brown.
