Preheat the oven to 350°F (175°C).

In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.

Add the egg and vanilla extract, and mix well.

In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the butter mixture and mix until just combined.

Gently fold in the white chocolate chips and raspberries.

Drop rounded tablespoonfuls of dough onto a lined baking sheet, spacing them about 2 inches apart.

Bake for 10-12 minutes, or until the edges are golden brown.

Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely. Enjoy!
