  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a large bowl, combine the flour, granulated sugar, baking powder, and salt. Add the cold butter and mix until the mixture resembles coarse crumbs.
  3. In a separate bowl, whisk together the egg, milk, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Gently fold in the fresh raspberries.
  5. In a small bowl, mix together the brown sugar and cinnamon for the streusel topping.
  6. Pour half of the batter into the prepared cake pan and spread it evenly. Sprinkle half of the streusel topping over the batter. Repeat with the remaining batter and streusel topping.
  7. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  9. Serve the raspberry streusel coffee cake at room temperature.
