  1. Preheat the oven to 325°F (160°C). Line a 9x9-inch baking pan with parchment paper.
  2. In a medium bowl, combine graham cracker crumbs, chopped pecans, and melted butter. Press the mixture into the bottom of the prepared pan.
  3. In a large mixing bowl, beat cream cheese, granulated sugar, and vanilla extract until smooth and creamy. Add eggs, one at a time, beating well after each addition.
  4. Pour the cream cheese mixture over the crust in the pan. Smooth the top with a spatula.
  5. Drop spoonfuls of raspberry preserves onto the cream cheese mixture. Use a knife to swirl the preserves into the cream cheese.
  6. Bake for 40-45 minutes, or until the edges are set and the center is slightly jiggly.
  7. Remove from the oven and let cool in the pan for 1 hour. Then refrigerate for at least 2 hours, or until completely chilled.
  8. Once chilled, remove the cheesecake from the pan using the parchment paper. Cut into bars and serve.
