Raspberry Cheesecake
Cheesecake is believed to have originated in ancient Greece and was served to athletes during the first Olympic games.

Preheat the oven to 325°F (163°C).

In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan.

In a separate bowl, beat cream cheese, sugar, and vanilla extract until smooth. Add eggs, one at a time, beating well after each addition.

Pour the cream cheese mixture over the crust in the springform pan.

Drop spoonfuls of raspberry preserves onto the cream cheese mixture. Use a knife to swirl the preserves into the batter.

Bake for 55-60 minutes or until the center is set.

Remove from the oven and let it cool in the pan for 10 minutes.

Refrigerate for at least 2 hours or until chilled.

Before serving, top with fresh raspberries and whipped cream.
