The term ‘brulee’ is derived from the French word ‘brûler’, which means ‘to burn’. It refers to the caramelized sugar crust on top of the dish.

This is vegetarian and gluten free recipe. Dish can be prepared in 55 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 6.

  1. Preheat the oven to 325°F (163°C).
  2. In a saucepan, heat the heavy cream over medium heat until it starts to simmer. Remove from heat.
  3. In a mixing bowl, whisk together the egg yolks, granulated sugar, and vanilla extract until well combined.
  4. Slowly pour the heated cream into the egg mixture, whisking constantly.
  5. Place raspberries in the bottom of four ramekins.
  6. Pour the custard mixture over the raspberries, dividing it evenly.
  7. Place the ramekins in a baking dish and fill the dish with enough hot water to reach halfway up the sides of the ramekins.
  8. Bake for about 30 minutes or until the custard is set but still slightly jiggly in the center.
  9. Remove the ramekins from the water bath and let them cool to room temperature.
  10. Refrigerate for at least 2 hours or until chilled.
  11. Just before serving, sprinkle turbinado sugar evenly over the top of each ramekin.
  12. Use a kitchen torch to caramelize the sugar until golden and bubbly.
  13. Let the brulees sit for a few minutes to allow the sugar to harden.
  14. Serve and enjoy!
