  1. Preheat the oven to 350°F (175°C). In a large bowl, cream together the butter and granulated sugar until light and fluffy. Stir in the almond extract. In a separate bowl, whisk together the flour and salt. Gradually add the flour mixture to the butter mixture, mixing until well combined. Roll the dough into 1-inch balls and place them on a baking sheet lined with parchment paper. Flatten each ball with the bottom of a glass. Bake for 10-12 minutes or until the edges are golden brown. Allow the cookies to cool completely on a wire rack. Spread raspberry jam on the bottom of half of the cookies. Top with the remaining cookies to form sandwiches. In a small bowl, mix together the sliced almonds and powdered sugar. Roll the edges of the cookies in the almond mixture. Let the cookies rest for 30 minutes to allow the flavors to meld. Enjoy!
