Carrots were first cultivated in Afghanistan over 1,000 years ago and were originally purple or yellow in color.
This is vegetarian recipe. Dish can be prepared in 27 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 12.

Preheat the oven to 350°F (175°C).

In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt.

In a separate large bowl, mix together the melted butter, brown sugar, and granulated sugar until well combined.

Add the egg and vanilla extract to the butter-sugar mixture and mix well.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Fold in the grated carrot, raisins, and chopped walnuts.

Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.

Bake for 10-12 minutes, or until the edges are golden brown.

Allow the cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
