  1. In a large bowl, cream together the butter and sugar until light and fluffy.
  2. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture and mix well.
  4. Divide the dough into six equal portions. Add a few drops of food coloring to each portion and mix until the color is evenly distributed.
  5. Roll each colored dough into a log and place them side by side on a baking sheet. Gently press the logs together to form a rainbow shape.
  6. Bake at 350°F (175°C) for 10-12 minutes or until the edges are lightly golden.
  7. Allow the cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
  8. Once the cookies are cooled, spread a thin layer of apricot jam on the bottom of one cookie and sandwich it with another cookie.
  9. Melt the semisweet chocolate in a microwave or double boiler. Dip each cookie halfway into the melted chocolate and place them on a parchment-lined baking sheet.
  10. Refrigerate the cookies for about 1 hour or until the chocolate is set.
