  2. Beat in the eggs, one at a time, followed by the vanilla extract.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Divide the dough into 4 equal portions.
  6. Add a few drops of food coloring to each portion and mix until the color is evenly distributed.
  7. Line a baking sheet with parchment paper.
  8. Take a small portion of each colored dough and roll it into a ball.
  9. Place the balls on the baking sheet, leaving some space between them.
  10. Flatten each ball slightly with the back of a spoon.

  13. Once the cookies are cool, spread a thin layer of apricot jam on the flat side of one cookie.

  16. In a microwave-safe bowl, melt the dark chocolate in 30-second intervals, stirring until smooth.
  17. Dip each cookie sandwich halfway into the melted chocolate.
