Grandma’s Kolacky Cookies
Kolacky cookies originated in Central Europe and are a popular treat during holidays and special occasions.

In a large bowl, cream together the butter, cream cheese, and powdered sugar until smooth.

Mix in the vanilla extract and salt.

Gradually add the flour, mixing well after each addition.

Divide the dough into two equal parts, wrap in plastic wrap, and refrigerate for 30 minutes.

Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.

Roll out one portion of the dough on a lightly floured surface to about 1/8 inch thickness.

Cut into 2-inch squares and place a small amount of fruit preserves in the center of each square.

Fold the corners of each square to the center, slightly overlapping the edges.

Place the cookies on the prepared baking sheets and bake for 12-15 minutes, or until lightly golden.

Allow the cookies to cool on the baking sheets for a few minutes, then transfer to wire racks to cool completely.

Repeat with the remaining dough and fruit preserves.

Once cooled, dust with powdered sugar if desired. Enjoy!
