  1. Preheat the oven to 160°C.
  2. Crush the digestive biscuits and mix with melted butter.
  3. Press the mixture into the base of a springform cake tin.
  4. In a large bowl, beat the cream cheese with sugar until smooth.
  5. Add sour cream, eggs, vanilla extract, lemon juice, and flour. Mix well.
  6. Pour the mixture over the biscuit base.
  7. Bake for 60 minutes or until set.
  8. Turn off the oven and leave the cheesecake to cool in the oven for 2 hours.
  9. Remove from the oven and refrigerate for at least 4 hours.
  10. Serve chilled.
