Line a baking sheet with parchment paper.

In a large saucepan, combine the sugar and corn syrup over medium heat. Stir until the sugar has dissolved.

Add the peanuts and butter to the saucepan. Cook, stirring constantly, until the mixture reaches 300°F (150°C) on a candy thermometer.

Remove the saucepan from heat and quickly stir in the baking soda and vanilla extract. The mixture will bubble up, so be careful.

Pour the mixture onto the prepared baking sheet and spread it out evenly.

Let the peanut brittle cool and harden for about 30 minutes.

Once hardened, break the brittle into small pieces.

Store in an airtight container.
