Spritz cookies originated in Germany and are traditionally made using a cookie press to create unique shapes.

Preheat the oven to 350°F (175°C).

In a large bowl, cream together the butter and sugar until light and fluffy.

Beat in the pumpkin puree, vanilla extract, and egg.

In a separate bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, and cloves.

Gradually add the dry ingredients to the wet ingredients, mixing well after each addition.

If desired, add a few drops of orange food coloring for a vibrant pumpkin color.

Fit a cookie press with a pumpkin-shaped disc and fill with the cookie dough.

Press the dough onto ungreased baking sheets, spacing cookies about 1 inch apart.

Bake for 10-12 minutes or until edges are lightly golden.

Remove from the oven and let cool on the baking sheets for 5 minutes.

Transfer the cookies to wire racks to cool completely.
