Preheat the oven to 350°F (175°C). In a mixing bowl, cream together the pumpkin puree, butter, and brown sugar until smooth. Add the egg and vanilla extract, and mix well.

In a separate bowl, combine the all-purpose flour, rolled oats, baking powder, cinnamon, nutmeg, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Fold in the chopped nuts.

Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper. Flatten each cookie slightly with the back of a spoon. Sprinkle granulated sugar on top of each cookie.

Bake for 10-12 minutes, or until the edges are golden brown. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
