Preheat the oven to 350°F (175°C). Grease a baking dish.

In a large bowl, whisk together the pumpkin puree, eggs, milk, granulated sugar, vanilla extract, cinnamon, nutmeg, and salt.

Cut the day-old bread into cubes and add them to the pumpkin mixture. Stir well to ensure all the bread is coated.

Let the mixture sit for 10 minutes to allow the bread to absorb the liquid.

Transfer the mixture to the prepared baking dish and spread it out evenly.

In a small saucepan, melt the unsalted butter over medium heat. Stir in the brown sugar until it dissolves.

Drizzle the butter and brown sugar mixture over the bread pudding.

Bake in the preheated oven for 40-45 minutes, or until the pudding is set and golden brown on top.
