In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for 5 minutes until frothy.

In a large mixing bowl, combine the flour and salt. Pour in the yeast mixture and mix until a dough forms.

Knead the dough on a lightly floured surface for about 5 minutes until smooth and elastic.

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour until doubled in size.

Preheat the oven to 425°F (220°C). In a large pot, bring 8 cups of water to a boil. Stir in the baking soda.

Divide the dough into 8 equal pieces. Roll each piece into a long rope and shape it into a pretzel. Place the pretzels on a greased baking sheet.

Carefully place the pretzels, one at a time, into the boiling water for 30 seconds. Remove them using a slotted spoon and return them to the baking sheet.

Sprinkle the pretzels with coarse salt and bake for 12-15 minutes until golden brown.

Brush the pretzels with melted butter while they are still warm. Let them cool for a few minutes before serving.
