Pretty in Pink Strawberry Cupcakes
Strawberries are not actually berries but rather an aggregate accessory fruit!

Preheat the oven to 350°F (175°C) and line a cupcake pan with paper liners.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy.

Beat in the egg and vanilla extract until well combined.

Gradually add the flour mixture to the butter mixture, alternating with the milk. Mix until just combined.

Fold in the pureed strawberries and pink food coloring, if desired.

Divide the batter evenly among the prepared cupcake liners.

Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let cool completely on a wire rack.

In the meantime, prepare the strawberry buttercream frosting. In a large bowl, beat together the powdered sugar, softened butter, vanilla extract, and milk until light and fluffy.

Once the cupcakes are completely cooled, frost them with the strawberry buttercream frosting.

Top each cupcake with a sliced strawberry.
