Peel and dice the potatoes, chop the onion and mince the garlic.

In a large pot, melt the butter over medium heat and sauté the onion and garlic until fragrant.

Add the diced potatoes and vegetable stock to the pot, bring to a boil, then reduce heat and simmer for about 20 minutes or until the potatoes are tender.

Use an immersion blender to puree the soup until smooth and creamy.

Stir in the heavy cream and season with salt and black pepper.

Cook for another 5 minutes to heat through.
