Potato pancakes, also known as latkes, are a traditional dish in many European and American cuisines. They are often served during Hanukkah celebrations in Jewish households.

Peel and grate the potatoes. Place them in a clean kitchen towel and squeeze out the excess moisture.

Finely chop the onion.

In a large bowl, combine the grated potatoes, chopped onion, egg, flour, salt, and black pepper. Mix well.

Heat vegetable oil in a large non-stick skillet over medium heat.

Drop spoonfuls of the potato mixture into the hot oil and flatten them slightly with the back of the spoon.

Cook until golden brown on both sides, about 3-4 minutes per side.

Remove the pancakes from the skillet and drain on paper towels.

Serve hot with sour cream or applesauce, if desired.
