Portuguese Risotto

Risotto is a traditional Italian dish, but this Portuguese version adds the delicious flavors of chorizo sausage and paprika.

Heat olive oil in a large pan over medium heat. Add onion, garlic, and bell pepper. Cook until softened.

Add chorizo and paprika. Cook for 2 minutes.

Add rice and stir to coat. Cook for another 2 minutes.

Add tomatoes and vegetable broth. Bring to a simmer.

Cover and cook for 20 minutes, or until rice is tender.

Stir in frozen peas and cook for another 5 minutes.
