  1. Heat olive oil in a large pan over medium heat. Add onion, garlic, and bell pepper. Cook until softened.
  2. Add chorizo and paprika. Cook for 2 minutes.
  3. Add rice and stir to coat. Cook for another 2 minutes.
  4. Add tomatoes and vegetable broth. Bring to a simmer.
  5. Cover and cook for 20 minutes, or until rice is tender.
  6. Stir in frozen peas and cook for another 5 minutes.
  7. Remove from heat and let it rest for 5 minutes.
  8. Stir in grated Parmesan cheese.
  9. Serve hot, garnished with fresh parsley.
