  1. Preheat the oven to 350°F (175°C).
  2. Remove the stems from the portobello mushrooms and chop them into small pieces. Set aside.
  3. Heat olive oil in a large skillet over medium heat. Add the chopped mushroom stems, onion, celery, and garlic. Cook until the vegetables are tender, about 5 minutes.
  4. In a large bowl, whisk together the eggs, milk, Parmesan cheese, dried thyme, dried sage, salt, and black pepper.
  5. Add the cooked vegetables to the egg mixture and mix well.
  6. Grease a baking dish and spread half of the Stove Top Stuffing Mix on the bottom.
  7. Pour the egg and vegetable mixture over the stuffing mix.
  8. Top with the remaining stuffing mix.
  9. Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the center is set.
  10. Remove from the oven and let it rest for 10 minutes before serving.
