Preheat oven to 325°F (160°C). Mix graham cracker crumbs and melted butter; press onto bottom of 9-inch springform pan.

Beat cream cheese, sugar, and vanilla with mixer until blended. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.

Bake 45 min. or until center is almost set. Cool completely. Refrigerate 2 hours.

Prepare creme brulee dessert mix as directed on package, using 1-1/2 cups milk. Pour over cheesecake just before serving; top with whipped topping.
