Pluot Crumb Bars
Pluots are a hybrid fruit, created by crossing plums and apricots. They have a sweet and tangy flavor.

Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking dish.

In a large bowl, combine the pluots, sugar, lemon juice, and cornstarch. Toss until the pluots are evenly coated.

In a separate bowl, mix together the flour, oats, salt, and butter until crumbly.

Press half of the crumb mixture into the bottom of the prepared baking dish.

Spread the pluot mixture over the crust.

Sprinkle the remaining crumb mixture over the pluots.

Bake for 40-45 minutes, or until the top is golden brown.

Allow to cool for at least 30 minutes before cutting into bars.
