  1. Preheat the oven to 180°C (350°F). Grease a muffin tin.
  2. Wash and pit the plums, then cut them into small pieces.
  3. In a large bowl, mix together the flour, sugar, ground almonds, baking powder, and a pinch of salt.
  4. Melt the butter in a small saucepan over low heat.
  5. In a separate bowl, whisk together the eggs and vanilla extract. Add the melted butter and mix well.
  6. Pour the wet ingredients into the dry ingredients and mix until just combined.
  7. Gently fold in the plum pieces and crushed amarettini cookies.
  8. Divide the batter evenly among the muffin cups.
  9. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  10. Allow the muffins to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
