Pistachios are one of the oldest edible nuts and have been enjoyed for centuries. They are also known as the ‘smiling nut’ in Iran and the ‘happy nut’ in China.

  1. In a food processor, grind pistachios until finely chopped.
  2. In a mixing bowl, combine heavy cream, sweetened condensed milk, and vanilla extract. Mix well.
  3. In a small bowl, sprinkle gelatin powder over water and let it bloom for 5 minutes.
  4. Microwave the gelatin mixture for 10 seconds or until fully dissolved.
  5. Add the gelatin mixture to the cream mixture and mix until well combined.
  6. Stir in the ground pistachios.
  7. Pour the mixture into serving glasses and refrigerate for at least 2 hours.
  8. Before serving, top with whipped cream and chopped pistachios.
