Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Cut the butter into small cubes and add it to the dry ingredients. Use your fingers to rub the butter into the flour mixture until it resembles coarse crumbs.
  4. Stir in the chopped pineapple.
  5. In a separate bowl, whisk together the egg and vanilla extract. Pour it over the dry ingredients and gently stir until the dough starts to come together.
  6. Transfer the dough onto a lightly floured surface. Knead it a few times to bring it together, then pat it into a 1-inch thick circle.
  7. Use a floured round biscuit cutter to cut out scones from the dough. Place them onto the prepared baking sheet.
  8. Brush the tops of the scones with heavy cream.
  9. Bake in the preheated oven for 10-12 minutes or until golden brown.
  10. Remove from the oven and let cool on a wire rack before serving.
