Preheat the oven to 375°F (190°C).

Roll out the puff pastry sheet and cut it into 8 equal squares.

In a mixing bowl, combine cream cheese, granulated sugar, vanilla extract, and egg. Mix until smooth.

Spoon the cream cheese mixture onto the center of each puff pastry square.

In a separate bowl, toss pineapple chunks with cornstarch until coated.

Place a few pineapple chunks on top of the cream cheese mixture in each square.

Fold the corners of the puff pastry squares over the filling, creating a danish shape.

Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown.
