  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, combine the coconut milk, pineapple juice, vanilla extract, egg, and melted butter.
  3. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  4. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  5. Drop spoonfuls of the doughnut batter into the hot oil and fry until golden brown, about 2-3 minutes per side.
  6. Remove the doughnuts from the oil and let them drain on a paper towel-lined plate.
  7. In a shallow bowl, mix together powdered sugar and shredded coconut.
  8. Dip each doughnut into the powdered sugar-coconut mixture, coating both sides.
  9. Top each doughnut with a maraschino cherry.
  10. Allow the doughnuts to cool for 30 minutes before serving.
